Vegetable Slicing Knife
A vegetable Knife has holes and a deflecting ridge on the face of the knife’s blade, the ridge pushes the slice away from the knife, the holes allow air to break any vacuum and these features on the knife discourages food from sticking to the blade and encourages the food to fall to the cutting board.
The holes go through the blade, but the ridge is only on one side — typically the right side — making these knifes a right handed knife.
The advantages of the vegetable slicing knife is that it is easier and faster to slice sticky foods, the disadvantage is that the knife costs a bit more — sharpening and wear will eventually cause the edge to meet the holes and that’s pretty much the last rodeo for the knife.
A trick to lessen slices sticking with a plain knife is to wet the blade with water first, before you start to use it, that helps.
